Ingredients
  

  • 2 can Artichoke Bottoms drained, rinsed and halved
  • 2 Avocado peeled and diced
  • 4 cup Arugula
  • 1/4 cup Parsley chopped
  • 1/4 cup Lemon Juice
  • 1/4 cup Olive Oil
  • Salt and Pepper to taste

Instructions
 

  • Combine the drained and rinsed artichoke bottoms, diced avocados, arugula, chopped parsley, and chopped fresh mint in a large bowl.
  • Whisk together the lemon juice and olive oil in a separate small bowl. Season with salt and pepper to taste.
